Fresh, local and sustainable
Established in 1958 and family owned for more than 40 years, the farm is one of Australia’s premium freshwater trout and salmon producers. All fish are hatched onsite, resulting in zero food miles from farm to pond. The trout and salmon are rich in Omega 3 and known for their versatility in the kitchen.
The farm is also famous for its traditional Mountain Ash wood fire smoked trout. Using a time-honoured method involving a 12-hour brine and a slow five-hour smoke in purpose-built smokers, the result is a deeply flavoured hot-smoked trout that has even been featured on MasterChef.
